Our wooden kitchen utensils — spatulas, spoons, salad servers, pie servers — are carved, sanded and oiled by hand in our workshop in Thônes, near Annecy. A wooden utensil scratches neither the pan nor the enamelled pot, never gets hot in the hand, passes on no taste and ages well: a well-kept spatula lasts through years of cooking.
We work close-grained solid woods, low in tannin and untreated: mostly beech, maple and pear, sometimes walnut for a darker piece. These are the traditional woods for food utensils: dense and barely porous, they absorb neither smells nor colours. No softwood, no plywood, no varnish: the finish is a food-grade oil that feeds the wood and is renewed in a minute.
Hand wash in hot water and dry upright; never the dishwasher or soaking, which open the grain and split the wood. When the surface turns dull or rough, a little oil (linseed, walnut or food-grade mineral oil) rubbed in with a cloth brings back its colour and protection. Each piece can be personalised with a made-to-order engraving — a first name, a date, a short word on the handle — for a wedding list, a housewarming, Mother's Day or a useful Christmas gift. Utensils are made to order, one at a time, then shipped within 3 to 5 days in France; free collection at the Thônes workshop. A particular shape, length or wood? No. Heat and prolonged soaking open the grain and eventually split the wood. A hand wash in hot water, then drying upright, is enough; a little food-grade oil every two or three months keeps the protection up.
